Halal ramen and sandwiches

Family-styled restaurants Umami Boru and Beard Brothers Deli aim to make ramen and sandwiches accessible for all.

Beard Brothers BBQ has left a big impression with their tender, juicy and flavourful meats in Tropicana Avenue, Petaling Jaya and now, they have spread their wings with two new offerings – halal ramen and sandwiches.

With Texas-style barbecue on tougher cuts like briskets and ribs, what happens to the other parts of the cows like the rumps, the sirloins and the flanks? To utilise other cuts of the meat and still maintain the quality, they came out with two new restaurants, Umami Boru and Beard Brothers Deli.

HALAL RAMEN

Umami Boru, which means Savoury Bowl, serves delightful bowls of ramen. Staying true to the Beard Brothers’ group philosophy of slow cooking, their ramen broth is cooked for more than 10 hours. The process allows the savoury goodness from the barbecue meats to be infused into the soup.

Chicken, beef and seafood ramen – each of them provides umami flavours of their own. The chicken ramen is made of homemade chicken ramen broth that is cooked for 12 hours. To make a perfect bowl, they top it with dried nori, soft boiled egg, deep-fried chicken karaage, spring onions and toasted sesame seeds.

The same cooking method is applied to beef ramen, but they replace the chicken with beef bacon to enhance the meaty flavours. Both of them have a very thick broth which can be overwhelming for people who have a sensitive taste bud, but it’s a delightful bowl of ramen for me, and it tastes almost similar to the halal ramen that I once ate in Japan.

TAKE A BITE OF THESE SANDWICHES

For Beard Brothers Deli, they provide a range of sandwiches made fresh daily, created with signature special cured meat and homemade sauces. It’s accessible, and they aim towards providing a quick and healthy snack for everyone.

Everything is prepared from scratch; a bite of BB New York Pastrami will invite you to taste the two weeks cured pastrami that is smoked for 14 hours. Every bit is a bite of joy where you can taste the mustard, Swiss cheese, salted cabbage relish and sourdough rye bread complimenting each other.

The London Salt Beef sandwich is made of the 14 days brined salt beef, cooked low and slow for five hours, topped with mustard, pickled onions and cucumbers with sourdough rye bread. If you are a fan of salty food, this will be your new favourite but fret not, the mustard and pickled onions combat the overwhelming saltiness and make it balanced.

Besides these two, three other sandwiches that you should try are Bee’s Knees Grilled Cheese, Chicken Katsu and Pulled beef.

Once you down with meal, it’s time to enjoy lemonade or the Beard Brothers cold brew brand called Rizalar. The Irish cream coffee, Rizalar La Creme Coffee, is brewed for a full 24 hours, producing a premium taste with a hint of vanilla and creamy nuttiness.
