Buon Appetito, indeed! Traders Hotel Kuala Lumpur’s recent Italian Week saw a week of delicious cuisine that got rave reviews from diners. It featured the expertise and creativity of Daniele Devillanova, who is the Chef de Cuisine of Waterfall Ristorante Italiano in Shangri-La Hotel, Singapore.

Chef Daniele comes from Apuia, a well-known region in the southeast for its fresh seafood and abundance of good quality olive oil, wines and seasonal fresh ingredients. At the early age of 10, his father introduced hunting skills to him, including the knowledge of wild product which they hand-picked in the hunting territory such as asparagus, wild mushroom and greens.

Chef Daniele infuses passion into his cooking

Along with hunting, Chef Daniele learnt the way food is traditionally preserved in an Italian Mediterranean family. Salted anchovies, sundried tomatoes and figs, oil preserved artichoke and eggplant, jams and also liquors were normally processed for the family consumption.

Therefore, Chef Daniele’s approach to food holds true to the Italian way of cooking by highlighting the quality of the ingredients and infused with passion.

Bringing his recipes all the way from his homeland, Daniele made a special appearance at Gobo Upstairs Lounge & Grill to present an authentic Italian gourmet experience, from risotto mascarpone to truffled semolina gnocchi and beef-stuffed agnolotti.

At a wine pairing dinner for invited guests and media members, the chef stayed true to his word, bringing the taste of Italy in exquisite presentations to the diner’s plates. From beginning to end, each and every dish was memorable in its own way.

Throughout the Italian Week, featured dishes were homemade semola friselle bread, DOP burrata, sweet tomatoes, braised lamb shank in nero d’ avola wine, coffee scents, smoked mashed potatoes, roasted pumpkin, orecchiette pasta in anchovies and fresh tomato base, chilly, broccoli mash, grilled mackerel fish, homemade cannolo siciliano, ricotta cheese, orange zest, chocolate chips, coffee English cream and more.
